The Ultimate Zero-Waste Pour-Over Coffee Recipe (Stainless Steel Filter Guide)
Brew Richer Coffee, Eliminate Paper Waste, & Support Horse Rescue
- The Method: Metal filter pour-over (Chemex compatible) allows natural coffee oils through for a heavier body and bolder flavor.
- The Workflow: Uses a 22g coffee dose—perfectly sidestepping the frustrating 30g capacity limit of most manual burr grinders.
- The Mission: We brew with Summer's Single Origin Colombia, where every bag sold helps fund Bearfoot Ranch horse rescue.
Ditching paper filters allows your coffee's natural oils to shine through the brew.
Why Switch to a Metal Filter for Pour-Over Coffee?
If you want café-quality specialty coffee at home, the pour-over method is legendary. But constantly buying paper filters creates unnecessary waste, and worse—the paper actually absorbs the natural, aromatic coffee oils your beans worked so hard to produce.
In our latest tutorial, we break down exactly how to use a Stainless Steel Coffee Filter to get a rich, full-bodied cup of coffee without the bitterness. Whether you are using a glass Chemex or a standalone carafe, this technique will elevate your morning routine.

☕ The Golden Ratio Coffee Recipe
We are using the SCA-recommended 1:16 Coffee-to-Water Ratio for a perfectly balanced cup.
- Coffee Dose: 22 grams (Medium-Coarse adjust)
- Water Volume: 350 grams (Filtered water off the boil)
- Grind Size: Medium-Coarse (Texture of rough sea salt)
- Bloom Time: 45 seconds
💡 Workflow Pro-Tip for Manual Grinders: Most high-quality manual burr grinders max out at a 30g capacity limit. By dialing in this 22g recipe, you completely avoid having to unscrew, refill, and re-grind mid-prep. It’s the perfect single-batch volume for hands-on brewers!
Step-by-Step Pour-Over Guide
Step 1: The Prep & Rinse (Video 0:34)
Even without a paper filter, you must pre-heat your brewer. Pour hot water through your stainless steel filter and into your empty glass carafe, then discard the water. This ensures your brewing water doesn't rapidly drop in temperature when it hits cold glass.
Step 2: The 45-Second Bloom (Video 1:02)
Add your 22g of medium-coarse coffee. Pour exactly enough water (around 45g) to saturate all the grounds, and wait 45 seconds. You will see the coffee expand and bubble. This "bloom" releases trapped carbon dioxide gas left over from roasting, preventing a sour or highly acidic extraction.
Step 3: The Even Pour (Video 1:38)
Using a gooseneck kettle, slowly pour the remaining water in gentle, concentric circles until your scale reads 350g total. Keep your water stream away from the direct metal edges off the filter; focus on the coffee bed to ensure the water flows through the grounds, extracting all the sweet caramel notes.
What's in our mug today? 🇨🇴
To really test this stainless steel pour-over method, we brewed our Summer's Single Origin Colombia. Roasted medium, this specific coffee works beautifully without a paper filter, allowing its complex tasting notes of sun-kissed caramel and gentle citrus to create a silky, heavy body that coats the palate.
